Three options depending on sensitivity: 1) OpenAI/Anthropic API with a data processing agreement (enough for most cases), 2) European endpoints from Microsoft Azure or Mistral, 3) self-hosted local model (Llama or similar). I'll recommend based on the real risk.

n8n is open source, self-hostable on your servers and much more flexible. Zapier is more expensive (>€50/month for simple workflows) and less flexible. If you already have Zapier running, I don't change anything — if we're starting from scratch, n8n.
